Instruction
To complete this assignment, students will work individually or with a partner to plan and conduct a nutrition education lesson. Each lesson will be designed towards food-insecure families in San Antonio. Students may choose a topic and life cycle group of their choice. Lesson Plan: Each group will plan a 1 hour nutrition lesson. The nutrition lesson will consist of the following:
Snapshot of Group Session: Includes title, class description, target audience , and type of learning activity of lesson plan.
Planning the Nutrition Education Group Session: Includes course learning objectives, key points, materials necessary to conduct lesson, resources needed, and how to set-up the class.
A Lesson Plan (Session Outline): Adapt very detailed set of instructions/outline for presentation of the class needs to be created so that anybody can pick up the program and present it.
A learning application/activity: At least one specific activity must be incorporated into the lesson so that audience members may actively participate in the program. Examples of activities include demonstrations, role-playing, games, etc. Remember that this only takes up part of the entire lesson. If you choose a food demonstration, the recipe should be selected from the Healthy Food Bank hub website, USDA Mixing Bowl, MyPlate Kitchen, curriculum selected, or food bank. The recipe should be inexpensive (i.e. <$1 per serving) using common ingredients (including foods available at the food bank) and does not require any special kitchen equipment. The recipe should be simple to prepare. If distributing food samples, preparation of food samples must be done following regulations of the local county health department.
Evaluation: Conduct pre- and post-tests (develop new or use existing) for the lesson to assess delivery of presentation, changes in knowledge, achievement of learning objectives, and future topics of interest or provide a post-survey to gather information.
