Learning Outcomes:
This project is intended to further your food and cultural knowledge of a culture or nation, including an understanding of the historical and cultural developments that led to the diet of a specific culture.
Content
Use the textbook and at least 2 additional scientific research-based resources (journal articles or books from databases, such as, PubMed or Google Scholar).
Information to thoroughly cover:
Cultural perspective of the ethnic group
Location and relevant history
Religion and family structure
Traditional health practices
Traditional food habits
Ingredients and common foods
Meal composition and cycles
Role of food in society and special occasions
Therapeutic uses of food
Contemporary food habits in the US
Adaptation of food habits
Nutritional status
Influence of the group on the US diet
Guidelines
Create a video presentation to be submitted via WebCampus/Canvas that addresses each of the content areas. (I will be the only one viewing this video). The video may be a PowerPoint with you talking over it, or it may be an actual video of you demonstrating the recipe (recipe may already be prepared to save time in your video, but go through the steps used) and talking about the culture that dish comes from, which should include the points listed above. Students have used Windows Movie Maker, videos shot on their smartphones, and uploaded videos to their YouTube channels in the past. Within WebCampus/Canvas, the only acceptable video formats to upload (aside form providing a YouTube link) will be .mov, .mp4 and .pptx WITH audio. If you have a large video file, usually uploading to YouTube and submitting your YouTube link has been most efficient.
Whichever method you choose, the key is to have AUDIO in order to fulfill the oral presentation portion of this course. Do not simply submit a standard PowerPoint presentation. The audio component is 20% of the overall grade for this assignment. Failure to provide audio will highly impact your overall grade, even if all topic areas are covered in a written format.
Your video should be 5-10 minutes in length.
As part of the presentation you are asked to select at least 1 recipe that includes a traditional food item and prepare it, or at least discuss how it should be prepared. You can provide still pictures here as well to lend to your overall description.
Creative and sensory appeal is encouraged in the video (cooking utensils, samples of music from the area, spices used in traditional recipes). Get creative!
Grading Guidelines/Criteria:
1) Cultural Video in either .mov, .mp4 or .pptx WITH audio, or a YouTube link
2) Full recipe (including ingredients) in bulleted format with numbered instructions below the ingredient list in MS Word or a PDF, using 12-point, Times New Roman font (double spacing is not required here).
*Upload both items to WebCampus/Canvas as attachments (or the YouTube link and recipe as an MS Word file/PDF).
3) References should be included on the last frame/slide of your video, and should also be included at the end of your recipe using APA formatting/guidelines.
4) The project is worth a total of 100 points
